How can you find out what’s in the cards when it comes to finding a wonderful coastal experience in the middle of the Las Vegas desert? The answer is “Go fish” – at the new location of Rubio’s Coastal Grill, home of the Original Fish Tacos, located at 7385 S Rainbow Blvd., which opens on October 10th.

Touted as boasting America’s most loved fish tacos and cited by the Washington Post and Los Angeles Times as the nation’s top fish taco expert, Rubio’s has sold more than 249 million Original Fish Tacos. Co-founder Ralph Rubio first brought his love of fish tacos to the U.S. after a college trip to Baja California, Mexico, opening his first restaurant in San Diego in 1983. Since then, Rubio’s Coastal Grill has established an avid fan base throughout the Southwest.

With 35 years of seafood mastery, Rubio’s offers a variety of healthy grilled seafood dishes without compromising flavor. Using responsibly sourced seafood, the menu features bold, unique flavors in dishes ranging from the Cilantro Lime Quinoa Bowl with Grilled Mahi Mahi to the Ancho Citrus Grilled Shrimp Burrito and Grilled Wild Alaska Salmon Tacos. Healthy options including nutrient-rich brown rice and quinoa, fresh greens with lemon agave vinaigrette, heart-healthy avocados and fresh house-made guacamole are always available.

To celebrate the opening and give back to the community, Rubio’s will donate 50 percent of opening day sales to the Judith E. Steele Elementary School. Additionally, all guests who order an entrée on October 3rd at the new Rainbow Blvd. restaurant will receive a prize-filled envelope. Three lucky winners will receive free Rubio’s for a year.
